Wall surfaces in food preparation, dishwashing and storage <br /> areas shall be smooth, light colored, easily cleanable and <br /> nonabsorbent to the highest level of splash or spray. <br /> a. Sheetrock with an enamel paint finish meets the minimum <br /> standards for nonsplash and dry storage areas. <br /> b. Wall surfaces in splash zones or high moisture areas such <br /> as dishwashing, hand and janitorial sink areas, etc. , must <br /> be finished with durable, nonabsorbent materials such as: <br /> 1) a fiber glass reinforced paneling (FRP) , or <br /> 2) ceramic tile. <br /> c. Stainless steel or equivalent materials should be installed <br /> behind the cooking line. <br /> 8 . Ceilings in food preparation, dishwashing, food storage areas, <br /> and bar areas shall be smooth, nonabsorbent, light colored, <br /> easily cleanable, and must not be perforated, fissured or <br /> textured. <br /> 9. Approved walk-in flooring material includes: <br /> • a. properly installed quarry tile or ceramic <br /> b. a factory provided metal floor <br /> c. epoxy resin <br /> 10. Walk-in cooler shelving must be NSF International approved <br /> stainless steel, factory precoated epoxy, or other materials <br /> designed for this type environment. Chrome or zinc shelving <br /> is not approved. <br /> 11. Provide effective shielding, such as plastic shields, plastic <br /> sleeves with end caps, shatterproof bulbs and other approved <br /> devices for all artificial lighting fixtures in areas where <br /> there are exposed food, clean equipment, utensils, and linens, <br /> or unwrapped single-service and single-use articles . <br /> Install a sufficient number of vapor-proof light fixtures in <br /> the walk-in cooler and/or freezer to provide a minimum of 10 <br /> foot-candles of light throughout the unit (s) . <br /> 12 . A separate on-site inspection will be conducted by the state <br /> plumbing inspector to determine compliance with the Minnesota <br /> Plumbing Code. <br /> 13. All hot water generating equipment (water heaters) must comply <br /> with Standard No. 5 of NSF International, and be of adequate <br /> capacity to meet the anticipated demand of the establishment. <br /> _ __ _ ____ __ _ __ _ <br />
