Overview of Restaurant Operations Facilities and Offices The Pizza Ranch in Elk River will be a 5962 square foot space. Currently, there are 52 parking spaces. Upon approval of funding, we will enter into negotiations with the adjacent vacant lot to secure the purchase, lease or easement to expand the parking lot to 100 spaces. Hours of Operation The restaurant will be open for lunch and dinner 7 days a week. Service will begin at llam and end at lOpm. The lunch buffet will begin at llam and end at 2:OOpm. The dinner buffet will begin at 4:30pm and end at 8:OOpm. The restaurant will be closed on Christmas and Thanksgiving. Employee Training and Education The General Manager and Assistant General Manager will be trained at the corporate training restaurant in Sheldon, Iowa prior to taking possession of the Pizza Ranch in Elk River. Corporate store openers will train employees in their specific operational duties and in the philosophy and applications of our concept two weeks prior to opening and also the first two weeks once the store opens. The General Manager and Assistant General Manager will be responsible for developing other key individuals at the Pizza Ranch. The owners and 4-6 immediate family members will also be involved in the day to day operations of the Pizza Ranch during the first few months of business to ensure a smooth opening. The Owners will continue to oversee and evaluate management and general store performance. Systems and Controls An emphasis will be placed on the quality and integrity of our products. They will be monitored for freshness and quality. Food costs and labor cost control will be handled by or computer system and monitored throughout the day by management. Food Production Food will be prepared on the premises. The Pizza Ranch of Elk River will be held to a high standard of cleanliness. The standards required by Pizza Ranch, Inc. will be executed at the Elk River Pizza Ranch. Delivery and Catering Food delivery will be similar to take-out (prepared to order). Delivery and take-out will be available in an effort to meet the needs of the community. 17
