<br />~ <br /> <br />. <br /> <br />. <br /> <br />. <br /> <br />} <br />'/' <br /> <br />.J <br /> <br />" <br /> <br />Ken Jordan <br />18990 Twin Lks Rd <br />Elk River, MN 55330 <br /> <br />The City of Elk River: <br /> <br />My name is Ken Jordan, and I am writing this letter regarding obtaining a conditional <br />use permit for a small catering business on my property, located at 18990 Twin Lakes <br />Rd., Elk River. In this letter, I will explain my business in general, and address possible <br />concerns one might have with the nature of a catering business. Most important, I will <br />illustrate our business planning, and show how we have dealt with these concerns. I <br />would also like to thank you for taking the time to review my application. <br /> <br />Pig's Unlimited Inc. is a small catering company, priding itself in providing its customers <br />with the unique experience of eating a pig roast. We are comprised of two people, <br />including myself. The small number of people involved allows for tighter quality control <br />and higher safety standards. Our menu is limited as well as specialized. This affects us <br />in two specific ways: <br /> <br />1. It allows for a limited amount of needed storage space. <br />2. It limits our "open season" from May to September. <br /> <br />Pigs Unlimited is not, nor is intended to be the primary source of income for any of our <br />employees. Its purpose is to exit as a hobby, or side job, providing as a supplement. It <br />fits my schedule well, as I work in the field of education and have more free time in the <br />summer months. <br /> <br />In preparation for business, we have converted an existing structure into our preparation <br />area, which is awaiting health inspection approval. The conversion process did not <br />change the exterior appearance in any way. All of the cosmetics changes have taken <br />place on the interior. In addition, we have set up accounts with various vendors to take <br />care of our needs. We have an account with Sysco Minnesota, whom we receive our <br />food and cleaning supplies from. We receive a delivery approximately every three to <br />four weeks. American Linen takes care of our aprons and towels. They will pick up our <br />soiled linens and switch them with clean ones. They deliver once every four weeks. <br />Corrow Sanitation has provided us with a dumpster which is located in an enclosed area <br />approximately 200 yards from the catering area. The dumpster is emptied every two <br />weeks. We use the company Grease Disposals Inc. for our grease disposal. <br />They provide us with a storage receptacle, and will remove the grease upon our request. <br />Our vendors visit infrequently enough, where they are not much of a traffic factor. <br /> <br />As I stated earlier, the catering company is located on 13 acres at 18990 Twin Lakes <br />Rd., Elk River on the comer of Twin Lakes Rd. and Tyler St. The acres I live on, offers a <br />good degree of privacy and allows us to deal with issues more effectively.
